Many bread bakers have been known to name their starters. Some sourdough starters have been living for decades. All over the world, maintained by families. Passed down from the family cooks. Generation to generation. I have dubbed mine Dough’lores.
After all your building a colony. A colony of healthy bacteria, a teaming city of bacteria. All dimpled and bubbling away to create the bases of good gut heath in your biome. It’s been touted by nutritionist for decades to ward off chemical gut imbalances. It reduces strain on your digestive system. As the pre-started fermentation process breaks down sugars and gluten you take in, reducing the stress on your system. Used by diabetics the world over.
Starting with a clean, unsealed container for air flow, kept in a space on your counter, until your first week is completed at least.
Day 1:
110 grams (approx 1/2 cup) whole wheat flour
110 grams pf filtered or boiler but now room temp water
Day 2 till day 4: Feeding every 24 hours, the starter left over from the 110 gram used for feeding is called disgard. Do not use disgard until its gone through the 9 day process. (NEVER put it down your sinks either it will clog them. Throw it out.) Liquid may form on the top of the starter, this is alcohol, or refered to as hooch. Stir the contains of the jar then measure or weight out your (1/2c or) 110 grams of started to feed.

110 grams filtered room temp water
110 grams whole wheat flour
Cleaning your container throughly between each feeding
Days 5 till 7: starting on day 6 feed every 12 hours (morning and night)

110 grams of 50/50 blend of whole wheat and white bread flour, this mix will be used to feed from now on, so premix a container for feedings.
110 grams of filtered room temp water
Day 8:
Continue feeding starter, today is the day to make bread.
Otherwise store in the fridge. Leave on counter again and continue feeding day and night for at least 2 to 3 days before using for bread again. Do NOT save disgard until the 8 days is completed. Store disgard in the fridge (Other recipies for disgarde to come)
