Peel Asparagus? 

Peel a vegetable with seemingly no skin? It seems unnecessary. But Julia Child claims this French method is the best way to prepare your asparagus at home. 

We’re encouraged to peel the outside ‘skin’ exposing the moist flesh beneath. Made much easier with peelers today then the paring knife used in the picture provided. Cut of the butts of the spears to make them all the same length, keeping as much as possible of the spears. Then bundle the spears together 3.5 inches in diameter. Leaving one or two loose to test. 

Keep a tall wide mouthed jar back in your recycling. It can be reused to store your asparagus. They last longer if standing upright in a 1/2 inch of water.

This hardy vegetable last long when stored properly and can be incorporated in breakfast, lunch and dinner.
